Making homemade pasta is easier and faster than one would think. This is my tried and true recipe for making fettuccine. It uses a hand cranked machine that attaches to the counter. They are relatively easy to find and are quite affordable.

First in a mixing bowl combine:
- 3 eggs (beat)
- 2 ts sea salt
- 2 1/2 cups of flour
- 4 Tb fresh water (add a few drops at a time if you need more to make the dough come together.
Mix well with a fork or wooden spoon and then use your hands to make it come together. Knead 4 minutes.

Split into 4 pieces. Take one piece and flatten it with your hands. Put through the pasta sheet portion of pasta maker with the knob set at 7. Repeat with knob set at 4. Then 2. As it comes through, dust with flour, cut in half if needed. Then put through fettuccine part set at 2. Dust with flour as you go so the noodles are not sticky. (I said easy, but I didn’t say it wasn’t messy!)

Repeat with other three sections. This serves about eight people so I like to freeze the pasta in portions, roughly a handful per person. Homemade pasta is more filling than regular pasta and has a satisfying bite to it.

Boil for 4 minutes. Drain and serve with home canned pasta sauce!
